Ingredients

  • 1 pt Cherry Tomatoes, halved
  • 1 lrg Zucchini, sliced
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Minced Oil-Cured Olives
  • 1 tsp Leaf Thyme
  • 1 tsp Finely Minced Garlic
  • 3 Tbsp. Grated Parmesan Cheese

Directions

  1. Preheat oven to 425 degrees. Arrange rows of tomatoes and zucchini alternately in 12x8x2 inch baking dish. Combine extra virgin olive oil, olives, thyme, and garlic in small bowl. Spoon extra virgin olive oil mix over vegetables.
  2. Sprinkle with Parmesan cheese.
  3. Bake in preheated oven for 20 to 25 min or possibly till vegetables are tender.
