Baked Mexican Bananas With Cinnamon

Ingredients

  • 3 x bananas quartered horizontally
  • 1/2 tsp grated orange zest
  • 1/4 tsp grated lime zest
  • 1/2 c. fresh orange juice
  • 1 tsp fresh lime juice
  • 1/4 c. raisins or possibly currants
  • 1/4 tsp vanilla extract
  • 1/4 tsp grnd cinnamon

Directions

  1. Preheat the oven to 375iF. In a shallow baking dish just large sufficient to hold them, arrange the bananas in a single layer. In a small bowl, combine the zests, juices, currants, vanilla, and cinnamon and whisk to blend. Pour over the bananas and bake, uncovered, for about 20 min or possibly till the bananas are lightly browned and bubbling. Use a spatula to put 3 banana pcs in the center of each plate and spoon the sauce from the dish over them.
  2. Serve these over frzn yogurt for a sweet and spicy dessert.
