Baked Fish With Orange Chili Marinade

Ingredients

  • 1/2 c. Fresh orange juice
  • 1/2 c. Fresh cilantro leaves, Minced
  • 1 Tbsp. Extra virgin olive oil
  • 2 x Cloves garlic, peeled and Chopped
  • 1 x Chipotle pepper, minced
  • 1 1/3 lb Fish fillets, (thick) Grnd black pepper, to Taste

Directions

  1. Combine the orange juice, cilantro, extra virgin olive oil, garlic and chipotle. Place the fish in a glass dish and cover with the marinade. Chill 1 hour.
  2. Remove the fish from the marinade and place on a rack set into a baking pan or possibly on a broiling pan. Bake in a preheated 450-degree oven 12 min per inch of thickness.
