Ingredients

  • 3 Tbsp. Suet
  • 2 lb Grnd beef
  • 1/3 c. Green pepper, cut in strips
  • 1 c. Minced onion
  • 1 Tbsp. Chili pwdr
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Msg (may omit)
  • 1 x Bay leaf
  • 10 x Garlic, minced
  • 16 ounce Cn kidney beans
  • 2 c. Tomatoes, minced
  • 1/3 c. Flour
  • 2 tsp Sugar
  • 1/2 tsp Baking pwdr
  • 3/4 c. Yellow cornmeal
  • 1 x Egg, beaten
  • 1/3 c. Buttermilk

Directions

  1. Heat suet in large, heavy pot. Add in meat, peppers, onions, chili pwdr, salt, pepper, MSG, bay leaf, and garlic. Brown meat mix till peppers and onions are tender. Add in beans, cover and simmer for 1 hour. Stir occasionally. Preheat oven to 375F. Combine flour, sugar, baking pwdr and cornmeal till well blended. In a separate bowl, combine egg and buttermilk. Pour egg mix into flour mix and beat till smooth. Let stand for 5 min. Pour chili filling into 9x13-inch cake pan. Spoon topping over chili and spread to touch sides. Bake for 30 min or possibly till cornmeal crust turns golden brown.
