Bahamian Baked Macaroni And Cheese

Ingredients

  • 1 box elbow macaroni
  • 2 Large eggs
  • 2 tbsp. butter
  • 1 small onion, minced
  • 1/2 green bell pepper, minced
  • red pepper, to taste
  • 1 block regular/sharp Cheddar cheese, grated
  • 1/2 c. evaporated lowfat milk
  • table salt or possibly seasoning salt, to taste

Directions

  1. Boil elbow macaroni as directed on the box. Drain and return to the pot it was boiled in. Add in grated cheese and remaining ingredients. Stir till cheese is melted, all ingredients are well-blended and texture is creamy.
  2. Pour into baking pan. Top with thin layer of grated cheese and bake at 350
