Ingredients

  • 4 Tbsp. Onion, minced
  • 4 c. Aubergine, diced, cooked
  • 4 c. Tomatoes, fresh, minced
  • 1 c. Vegetable broth
  • 4 Tbsp. Curry pwdr
  • 1 tsp Cinnamon
  • 2 tsp Salt
  • 8 x Garlic cloves, minced
  • 24 x Crepes

Directions

  1. Saute/fry all the ingredients, except the crepes, in a large skillet over medium heat for 10 min. Divide the mix proportionately between the crepes.
  2. Roll up and serve warm. Top with Greek Tomato Sauce.
  3. Makes 24 crepes
