Ingredients

  • 4 lrg Potatoes, peeled and sliced
  • 2 med Aubergines, sliced
  • 2 Tbsp. Tomato sauce
  • 3 Tbsp. Ketchup
  • 1/2 c. Water
  • 2 x Large eggs Salt and pepper L00 grams grated yellow cheese

Directions

  1. Mix the sauce ingredients together.
  2. Grease a rectangular baking pan. Place aubergine on bottom, then potatoes and then sauce. Cover with grated cheese. Bake in a moderate oven for 35 min till cheese is melted.
