Ingredients

  • 3 lb Asparagus, ends trimmed
  • 1/3 c. Extra virgin olive oil, (12 ounce)
  • 3 Tbsp. Fresh lemon juice

Directions

  1. Cook asparagus in large pot of boiling salted water till crisp-tender, about 4 min. Drain; rinse with cool water and drain again. Pat dry.
  2. (Can be made 1 day ahead. Cover and chill.)
  3. Heat oil in heavy large pot over medium-high heat. Add in asparagus to pot.
  4. Stir till heated through and coated with oil, about 5 min. Drizzle with lemon juice. Season to taste with salt and pepper. Arrange asparagus on platter.
