Ingredients

  • 3/4 lb Arugula leaves
  • 1 med Size red onion cut into Thin slices
  • 1 tsp Finely minced garlic
  • 1 Tbsp. Red-wine vinegar
  • 3 Tbsp. Extra virgin olive oil Salt and fresh grnd Pepper

Directions

  1. Pick over the arugula leaves and remove and throw away any tough stems. Rinse and drain the leaves. Pat dry. Place the leaves in a salad bowl. Add in the onion slices, garlic, vinegar, oil, salt and pepper. Toss and blend well.
  2. Serve.
