Ingredients

  • 2 tsp Gelatin
  • 1 c. Sugar
  • 2 c. Apricot nectar
  • 2 Tbsp. Orange juice
  • 2 tsp Lemon peel -- grated

Directions

  1. Sprinkle gelatin into 1/4 c. cool water. Let stand 5-10 min to soften.
  2. Put softened gelatin into 1-1/2 c. VERY warm water. Stir till gelatin is completely dissolved. Add in 1 c. sugar and stir till sugar is dissolved.
  3. Blend 2 c. apricot nectar, 2 Tbsp. orange juice and 2 tsp. grated lemon peel into the gelatin mix. Cold, then pour into a refrigerator tray.
  4. Place in freezer and freeze till hard. This should take about 4 hrs. Serve in chilled sherbet glasses.
  5. Yield: about 1 qt.
