Apple Pancakes With Cider Sauce

Ingredients

  • 2 c. Biscuit mix
  • 1/2 tsp Cinnamon, grnd
  • 1 x Egg, beaten
  • 1 1/3 c. Lowfat milk
  • 1 med Apple, shredded
  • 1/2 c. Sugar
  • 1 Tbsp. Cornstarch
  • 1/8 tsp Cinnamon, grnd
  • 1/8 tsp Nutmeg, grnd
  • 1 c. Apple cider
  • 1 Tbsp. Lemon juice
  • 2 Tbsp. Butter or possibly margarine

Directions

  1. Combine biscuit mix and cinnamon in a bowl. Combine egg and lowfat milk; stire into dry ingredients till smooth. Stir in shredded apple.
  2. For each pancake, spoon about 1/4 c. batter onto a warm lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges are brown.
  3. Serve with Cider Sauce.
  4. Makes about 13 4-inch pancakes (about half which if you make 'em big like I do).
  5. Sauce: Combine first 4 ingredients in a heavy saucepan. Gradually add in apple cider and lemon juice. Cook over medium heat, stirring constantly, till mix boils. Cook 1 minute, stirring constantly. Remove from heat, stir in butter or possibly margarine.
