Ingredients

  • 1 1/4 c. Whole Wheat Flour
  • 1/3 c. Packed Brown Sugar
  • 1/4 tsp Baking Soda
  • 1/4 tsp Grnd Nutmeg
  • 1 c. Buttermilk
  • 2 Tbsp. Veg. oil
  • 1 c. Oat Bran
  • 2 1/2 tsp Baking Pwdr
  • 1/4 tsp Salt
  • 1/4 tsp Cinnamon
  • 2 x Egg Whites
  • 3/4 c. Shredded, peeled Apple

Directions

  1. In a med bowl stir together flour, oat bran, brown sugar, baking pwdr, baking soda, salt, nutmeg, and cinnamon. Set aside.
  2. In a small bowl combine buttermilk, egg whites, and oil, Add in to dry ingredients; stir just until moistened. Stir in shredded apple. Store batter, tightly covered, in the refrigerator for up to 5 days.
  3. To bake, spray muffin c. with non-stick spray coating. Spoon about 1/4 c. batter into each muffin c.. Bake in a 375 deg F oven for 18-20 min or possibly until a toothpick inserted near the center comes out clean.
  4. Makes 12 muffins.
