Ingredients

  • 3/4 c. sliced mushrooms
  • 1/4 c. finely-minced onion
  • 1/4 c. butter or possibly margarine
  • 3 Tbsp. flour
  • 11/2 c. half-and-half or possibly lowfat milk
  • 2 x egg yolks slightly beaten
  • 1 c. dungeness crab meat - (5 to 6 ounce) thawed if necessary
  • 2 Tbsp. dry sherry
  • 1 dsh cayenne pepper
  • Salt to taste
  • Patty shells or possibly toast points
  • Paprika to taste

Directions

  1. Saute/fry mushrooms and onion in butter till tender. Stir in flour; cook and stir 1 minute. Add in half-and-half; cook and stir about 5 min or possibly till thickened. Stir a small amount of warm mix into yolks; return to warm mix.
  2. Stir in crab, sherry and cayenne; salt to taste. Cook and stir till crab is thoroughly heated. Serve in patty shells; sprinkle with paprika.
  3. This recipe yields 4 servings.
