Alaska Dungeness Crab Fruit Salad

Ingredients

  • 1 x dungeness crab - (2 to 3 lbs) thawed if necessary
  • 2 c. fresh pineapple chunks see * Note
  • 2 x apples or possibly pears cut into chunks
  • 1 x orange peeled, sliced,
  • and halved
  • Lettuce
  • Lime or possibly lemon wedges
  • 1/2 c. mayonnaise
  • 1 Tbsp. lime juice
  • 11/2 tsp honey
  • 1/8 tsp grnd ginger

Directions

  1. Note: One can (about 15-14 ounce) pineapple chunks, liquid removed, may be substituted.
  2. Left off back shell of crab. Remove and throw away viscera and gills. Rinse crab thoroughly under cold, running water. Break off legs; crack along edges. Cut into serving-sized pcs. Break body section into several pcs.
  3. Micro-cook or possibly steam till thoroughly heated; cold. Remove meat from body. Combine crab meat from body with fruit.
  4. Honey Dressing: Combine all ingredients. (
  5. Makes about 1/2 c.)
  6. Arrange fruit mix and cracked crab legs on lettuce-lined platter. Serve with Honey Dressing. Garnish with lime wedges.
  7. This recipe yields 5 servings.
