2 Hour Sausage Ragu

This is a big dish that I threw together this weekend to rave reviews. I add a little sugar a la "The Godfather". Remember that scene?

Ingredients

  • 3 cloves garlic
  • 1/8 cup olive oil
  • 2 small carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 28 oz diced tomatoes
  • 1/2 tsp garlic powder
  • 1 heaping tbsp basil
  • 1 heaping tsp oregano
  • 1/2 cup chick stock
  • 1/4 tsp red pepper flakes
  • 1 tsp brown sugar
  • 1/2 medium onion
  • 1/4 tsp cumin seeds
  • 2 strips bacon
  • 1lb italian sausage (loose, not rolled)
  • salt and pepper to taste

Directions

  1. First brown the meats and set aside: Coursely chop the bacon and saute in a pan with one finely chopped garlic clove. When browned, remove from heat into a bowl. Leave the fat. Add sausage and brown. When done, put in same bowl as bacon.
  2. In a large pan, lightly fry remaining garlic, onion, carrots and celery in olive oil on medium heat. Add tomatoes after about 5 minutes and bring to a boil. Reduce heat to low and simmer for 5 minutes.
  3. Add remaining ingredients and simmer (covered) for 30-45 minutes. Taste and add salt and pepper as necessary.
  4. Add meats to sauce and slowly simmer for another 1 hour, stiring about every 15 minutes.
  5. Serve with your favorite pasta!
