authentic curry recipes wanted!
I thought i'd join this group as i like making curries,but the only problem is they don't taste as good as the indian restaurants curries,so i would be greatful for some new authentic recipes!

Giving you a redipe for simple curry paste to make any vegetable based curry for 4 people.This can be stored in an air-tight bottle in the refrigerator for upto a month depending on freshness of the ingredients.
Garlic- 30 to 50 grams
Green chillies- 2
Chop finely and grind finely.
This paste can be used as a base.
Typically, heat oil, season with mustard or cumin seeds.Add chopped onions and fry till golden brown. Then add 1-2 tsp on the paste and fry till it gets dry.
Add chopped tomatoes(2-3,depending on their size) and more oil and fry with salt,turmeric powder,cumin pd,coriander pd till the tomato changes colour and the fat starts leaving the sides of the curry mixture.
Then add vegetables/lentils(boiled chickpeas)/Chicken/Mutton.Stir well.
Add stock or water and cook covered till done.
This is a basic and simple recipe.
There are thousands of pastes and formulas.
