Zucchini Ribbons with Goat Cheese
Total time: 15 minutes Ingredients:
1 medium zucchini (courgette), about 8 ” (20cm)
3 tbs soft goat cheese
1/2 cup cherry tomatoes, cut in half
handful fresh basil leaves
1 tbs olive oil
Instructions:
Cut zucchini into thin ribbons using a vegetable peeler.
Sauté in olive oil in large skillet briefly, 2 – 3 minutes
Remove from heat, add goat cheese and stir until cheese melts.
Add tomatoes, basil and serve.
