  • 4 c. shredded zucchini
  • 1 c. minced onion
  • 2 T butter
  • 2 teaspoon snipped parsley
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic pwdr
  • 1/4 teaspoon dry oregano
  • 1 (6 - 6 1/2 ounce) pkg. pizza crust mix or possibly make your own
  • Non-stick spray coating
  • 2 beaten large eggs
  • 8 ounce (2 c.) shredded Mozzarella cheese
  • 4 ounce sliced pepperoni or possibly sausage, cooked & liquid removed

Directions

  1. In large frying pan, cook zucchini and onion in hot butter till tender. Add in parsley, pepper, garlic pwdr, oregano; cook 5 min. Stir frequently till most of liquid is evaporated. Remove from heat. Cool slightly. Prepare pizza crust. Spray pizza pan with non-stick spray coating. Press dough into pan and up the edges. Bake at 375 degrees for 10 min.Put together large eggs, Mozzarella cheese, and sausage; stir into zucchini mix. Spread on top of partially baked crust. If using pepperoni, place on top. Bake, uncovered 20 to 25 min, or possibly till golden brown.
