Zucchini - Oatmeal Spice Coffee Cake

Ingredients

  • 1 1/2 c. flour
  • 1 1/4 c. oatmeal
  • 1 c. brown sugar
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 1/4 c. dairy lowfat sour cream
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 c. shredded zucchini
  • 1/2 c. butter, softened
  • 3/4 c. sugar
  • 1/2 c. oatmeal
  • 1/2 c. flour
  • 1/4 c. softened butter
  • 1/2 teaspoon cinnamon

Directions

  1. Heat oven to 350 degrees. Grease and flour 9 x 13 inch pan. Put together all coffeecake ingredients at low speed. Put in pan. Mix topping ingredients till crumbly. Sprinkle over batter. Bake at 350 degrees for 30 to 40 min or possibly till toothpick inserted in center comes out clean. Cut into squares. Serve warm or possibly cool with whipped cream.
