Ingredients

1 c. oil
2 c. sugar
2 c. grated zucchini
1 pkg. vanilla instant pudding
3 c. flour
1 teaspoon baking soda
1/4 teaspoon baking pwdr
1/2 c. nuts (opt.)
1/2 c. raisins (opt.)

Directions

Mix together large eggs, oil, sugar and zucchini. Add in remaining ingredients; mix well. Bake in 2 loaf pans, greased and lightly floured at 350 degrees for approximately 1 hour. Freezes well.
