  • Cuban Fricaise de Pollo (Cuban Hunters Chicken)
  • 2 chicken thighs and 2 chicken legs (roast it yourself or buy a chicken pre-roasted to save time)
  • 1 15oz can dice tomatos
  • 1 medium yellow onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 3/4 cup Spanish olives, thinly sliced
  • 2 tsp cumin
  • 1 tsp oregano
  • Kosher salt and fresh cracked black pepper tt
  • parsley for garnish
  • Spanish olive oil
  • steamed white rice
