Yakima Asparagus Quiche Recipe

Ingredients

  • 1 cup of all-purpose flour
  • ½ teaspoon of salt
  • 3 Tablespoons each of butter and shortening (I use Spectrum Organic)
  • 3 Tablespoons of ice-cold water
  • 1 pound of fresh Yakima asparagus, untrimmed
  • ½ cup of sliced mushrooms
  • ½ cup of chopped onion
  • 2 teaspoons of olive oil or butter
  • 4 whole eggs + 2 egg whites
  • 1 cup of 2% milk (I use Lactaid)
  • 6 ounces of grated Jarlsberg (best) or Swiss cheese
  • Pinch of ground nutmeg
  • Salt and pepper to taste
