%3C/p%3E%3Cp%3EWhile%20Michele%20and%20I%20made%20wreaths%20and%20bows%20for%20her%20local%20holiday%20bazaar%20we%20talked%20about%20the%20farm,%20the%20grape%20and%20vegetable%20harvest,%20our%20children%20and%20our%20friendship%20that%20has%20spanned%2030%20years.%20I%20still%20have%20a%20warm%20feeling%20today%20thinking%20about%20the%20last%2048%20hours%20spent%20in%20the%20embrace%20of%20a%20lifelong%20friendship%20and%20shared%20memories.%3C/p%3E%3Cp%3EThe%20boys%20cleared%20and%20leveled%20a%20field,%20rode%20a%204%20wheeler,%20helped%20with%20feeding%20the%20horses%20and%20generally%20had%20the%20best%20time%20four%2015%20year-olds%20can%20have%20without%20a%20video%20game%20in%20sight!%20Michele's%20husband%20proclaimed%20them%20excellent%20farmers%20and%20invited%20them%20back%20anytime.%20He%20knows%20free%20labor%20when%20he%20sees%20it!%20Of%20course%20it%20didn't%20hurt%20the%20boys%20performance%20that%20Michele's%20lovely%2015%20year%20old%20daughter%20was%20on%20hand%20to%20be%20suitably%20impressed.%3C/p%3E%3Cp%3EWhat%20did%20you%20do%20this%20weekend?%3C/p%3E%3Cp%3EAll%20the%20wonderful%20root%20vegetables%20are%20in%20markets%20now;%20parsnips,%20turnips%20and%20beets%20of%20every%20color.%20These%20fall%20harvest%20vegetables%20store%20beautifully%20over%20a%20long%20period%20of%20time%20so%20stock%20up%20now%20while%20they%20are%20plentiful%20and%20inexpensive.%20Just%20keep%20them%20in%20a%20cool,%20dark%20and%20dry%20place%20and%20you%20can%20enjoy%20their%20goodness%20throughout%20winter.%3C/p%3E%3Cp%3EMixed%20Green%20Salad%20with%20Roasted%20Beet%20Vinaigrette%20and%20Warm%20Goat%20Cheese%20Crouton.%3C/p%3E%3Cp%3E(serves%206)%3C/p%3E%3Cp%3EFour%20small%20to%20medium%20sized%20red%20beets,%20scrubbed%20and%20greens%20chopped%20off%3C/p%3E%3Cp%3EAluminum%20foil%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%20Wrap%20each%20beet%20in%20foil.%20Place%20wrapped%20beets%20in%20shallow%20roasting%20pan%20and%20fill%20with%20water%20to%20cover%20beets%20halfway.%20Roast%20in%20oven%20for%201%201/2%20hours%20or%20until%20soft%20when%20pierced%20with%20tip%20of%20knife.%20Remove%20from%20water%20and%20allow%20to%20cool.When%20cool%20enough%20to%20handle,%20unwrap%20beets%20and%20slip%20the%20skins%20off.%20You%20may%20want%20to%20wear%20gloves%20and%20cover%20your%20work%20surface%20with%20paper%20to%20avoid%20beet%20stained%20hands%20and%20counters.%3C/p%3E%3Cp%3ESlice%20goat%20cheese%20log%20into%206%20rounds.%20Dip%20into%20beaten%20egg%20white,%20then%20bread%20crumbs.%20Freeze%20for%2015%20minutes.%20Heat%20oil%20on%20medium%20high%20in%20small%20nonstick%20frying%20pan.%20Quickly%20add%20goat%20cheese%20rounds%20and%20brown%20each%20side%20about%2030%20to%2060%20seconds.%20Turn%20and%20brown%20other%20side.%20Remove%20to%20plate.%3C/p%3E%3Cp%3ESalad%20Assembly:%3C/p%3E%3Cp%3E6%20cups%20mixed%20greens%3C/p%3E%3Cp%3E2%20roasted%20beets,%20sliced%20in%20rounds,%20then%20halved%20to%20form%20half%20moons.%3C/p%3E%3Cp%3EPine%20Nuts,%20toasted%20(optional)%3C/p%3E%3Cp%3EArrange%201%20cup%20of%20greens%20on%206%20salad%20plates.%20Arrange%20a%20few%20half%20moons%20of%20beets%20on%20top%20of%20each%20salad.%20Place%20one%20warm%20goat%20cheese%20crouton%20on%20top%20of%20beets.%20Drizzle%20all%20over%20with%20(room%20temperature)%20roasted%20beet%20vinaigrette,%20top%20with%20pine%20nuts.%3C/p%3E%3Cp%3EA%20Cook's%20Notes:%20This%20is%20a%20lovely%20luncheon%20salad%20when%20served%20with%20a%20warm,%20crusty%20bread.%20For%20dinner,%20serve%20with%20roasted%20chicken,%20bread%20and%20a%20crisp%20Riesling.%20That's%20what%20I'm%20having%20for%20dinner%20tonight!%3C/p%3E){kind=link}
