Ingredients

  • 2 pkg. yeast
  • 1 T sugar
  • 1 c. lukewarm water
  • 1 c. lowfat milk (hot)
  • 3 large eggs, beaten (room temperature)
  • 6 T oil (or possibly a little more 7-8 T)
  • 1/2 c. sugar
  • 1 teaspoon salt
  • 6 1/2-7 c. flour
  • 1 c. potato flakes

Directions

  1. Put together yeast, sugar and water. Mix together lowfat milk, oil, sugar, salt and 2 cups flour.In separate bowl add in warm water to potato flakes till soupy. Add in large eggs and soupy potatoes to mix. Add in sufficient remaining flour as needed. Let rise. Roll 3/8 inch thick. Cut into donut shape. Fry in oil at 325 degrees till golden brown on each side. Use leftover, over worked dough for fritters. 2/3 dough 1/3 pie filling.
