Ingredients

  • 1 c. flour
  • 1 1/2 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1 c. whole wheat flour
  • 2 Large eggs
  • 2/3 c. vegetable oil
  • 1/4 c. honey
  • 1/2 teaspoon lemon juice
  • 1 1/2 c. shredded zucchini
  • 1/2 c. minced nuts
  • 1/4 c. raisins

Directions

  1. Sift flour, baking pwdr, baking soda, salt, cinnamon and allspice. Stir in whole wheat flour. Beat Large eggs, oil, honey and lemon juice with rotary beater till smooth and frothy. Stir in zucchini. Add in flour mix and stir well, but don't beat. Stir in nuts and raisins.
  2. Turn into greased 9 x 5 x 3 inch loaf pan. Bake in 325 degree oven for 1 hour, or possibly till toothpick inserted in center comes out clean.
