- pretzel bites adapted from King Arthur Flour Whole Grain Baking, sauce adapted from Smells Like Home
- Pretzels
- Dough
- 1 3/4 cups (7 oz) white whole wheat flour
- 1 cup water, at room temperature
- 1 tablespoon unsalted butter, at room temperature
- 1 1/2 cups (6 3/8 oz) bread flour
- 1 1/2 teaspoons salt
- 1 teaspoon instant yeast
- 1 teaspoon honey
- Water Bath
- 8 cups water
- 2 tablespoons baking soda
- Finishing
- 1 egg beaten with 1 tablespoon water and a pinch of salt (for egg wash)
- pretzel (or kosher) salt (for topping)
- Jalapeño Cheese Sauce
- 1 large jalapeño
- 1 1/2 tablespoons unsalted butter
- 1 1/2 tablespoons flour
- 3/4 cup milk (I used whole)
- 6 oz pepper jack cheese, shredded

%3C/p%3E%3Cp%3EWhole%20Wheat%20Pretzel%20Bites%20with%20Roasted%20Jalape%C3%B1o%20Cheese%20Sauce%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer,%20stir%20together%20the%20white%20whole%20wheat%20flour%20and%20the%20water%20using%20a%20wooden%20spoon%20until%20combined.%20Cover%20the%20bowl%20and%20let%20rest%20for%2020%20minutes.%20Add%20the%20butter,%20bread%20flour,%20salt,%20yeast,%20and%20honey,%20and%20again%20mix%20with%20the%20wooden%20spoon%20until%20a%20rough%20dough%20comes%20together.%20Place%20the%20bowl%20on%20the%20mixer%20and%20fit%20the%20mixer%20with%20the%20dough%20hook.%20Knead%20on%20low%20speed%20for%20about%205%20minutes,%20or%20until%20the%20dough%20is%20smooth%20and%20elastic.%20Cover%20the%20bowl%20again%20and%20allow%20the%20dough%20to%20rise%20in%20a%20warm%20place%20for%20about%2090%20minutes,%20or%20until%20doubled%20in%20size.%3C/p%3E%3Cp%3EWhen%20the%20dough%20nears%20the%20end%20of%20its%20rise%20time,%20preheat%20oven%20to%20450%20F.%20Line%20two%20baking%20sheets%20with%20parchment%20paper.%20Add%20the%20water%20to%20a%20large%20pot%20and%20set%20over%20medium%20to%20medium-high%20heat.%20Let%20it%20come%20to%20a%20boil%20as%20you%20shape%20the%20pretzel%20bites.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20lightly%20floured%20work%20surface.%20Divide%20the%20dough%20into%208%20equal%20pieces.%20Roll%20each%20piece%20into%20a%20long%20rope,%20measuring%20about%201/2-inch%20thick.%20Cut%20the%20dough%20into%20one%20inch%20pieces%20to%20make%20pretzel%20bites.%20Repeat%20with%20the%20remaining%20pieces%20of%20dough.%3C/p%3E%3Cp%3EReturn%20to%20the%20water%20bath%20and%20once%20the%20water%20is%20boiling,%20reduce%20the%20heat%20so%20it%20simmers%20and%20stir%20in%20the%20baking%20soda.%20Add%20about%2010-15%20pretzel%20bites%20at%20a%20time%20to%20the%20water%20bath%20and%20cook%20for%2030%20seconds.%20Remove%20with%20a%20large%20slotted%20spoon%20or%20spider%20strainer%20and%20place%20the%20pretzel%20bites%20on%20the%20prepared%20baking%20sheets,%20making%20sure%20they%20are%20spread%20in%20a%20single%20layer.%20Repeat%20until%20all%20of%20the%20pretzel%20bites%20have%20been%20boiled.%20Brush%20the%20pretzel%20bites%20with%20the%20egg%20wash%20and%20sprinkle%20liberally%20with%20the%20salt.%20Bake%20for%2012-15%20minutes,%20or%20until%20golden%20brown.%20The%20pretzel%20bites%20are%20best%20served%20warm.%3C/p%3E%3Cp%3ETo%20make%20the%20cheese%20sauce:%20Roast%20the%20jalape%C3%B1o%20until%20blackened%20on%20all%20sides%20%E2%80%93%20I%20did%20this%20on%20my%20gas%20stovetop,%20but%20you%20could%20also%20use%20your%20oven%E2%80%99s%20broiler%20if%20you%E2%80%99d%20rather.%20Once%20blackened,%20place%20the%20jalape%C3%B1o%20in%20a%20bowl%20and%20cover%20the%20bowl%20with%20plastic%20wrap.%20Let%20stand%20for%2010-15%20minutes,%20then%20peel%20the%20blackened%20skin%20from%20the%20pepper.%20Remove%20the%20ribs%20and%20seeds%20from%20the%20pepper%20(unless%20you%20want%20to%20leave%20them%20for%20the%20extra%20heat)%20and%20cut%20the%20pepper%20into%201/4-inch%20pieces.%3C/p%3E%3Cp%3EAdd%20the%20butter%20to%20a%20small%20saucepan%20and%20set%20over%20medium-low%20heat.%20Let%20the%20butter%20melt,%20then%20mix%20in%20the%20jalape%C3%B1o%20pieces,%20tossing%20to%20coat%20with%20the%20butter.%20Add%20the%20flour,%20whisking%20constantly%20and%20cooking%20for%2030%20seconds%20to%201%20minute.%20Gradually%20whisk%20in%20the%20milk%20until%20the%20mixture%20is%20smooth.%20Whisking%20almost%20constantly,%20continue%20cooking%20until%20the%20mixture%20thickens,%20about%203%20minutes.%20Take%20the%20pan%20off%20of%20the%20heat%20and%20add%20the%20shredded%20cheese.%20Stir%20until%20the%20cheese%20has%20completely%20melted%20and%20the%20sauce%20is%20smooth.%20You%20can%20adjust%20the%20consistency%20as%20necessary%20here%20%E2%80%93%20my%20sauce%20was%20a%20little%20thicker%20than%20I%20wanted%20so%20I%20thinned%20it%20with%20a%20tiny%20bit%20of%20milk.%20Season%20to%20taste%20with%20salt.%3C/p%3E){kind=link}
