Whole Wheat Dinner Rolls Recipe

Ingredients

  • 1 pkg. dry yeast
  • 1/4 c. hot water
  • 3/4 c. skim lowfat milk
  • 1 lg. egg
  • 3 tbsp. unsalted butter (soft)
  • 1 tbsp. sugar
  • 1/4 teaspoon salt
  • 1 1/2 c. sifted all-purpose flour
  • 1/2 c. unsifted whole wheat flour
  • Non-stick cooking spray

Directions

  1. 1. In large bowl combine yeast and water, let stand 5 min, then stir.
  2. 2. Add in lowfat milk, egg, butter, sugar and salt. Beat well. Fold in all flour. Scrape the dough from the sides of the bowl to create a ball. Cover with clean towel and let rise in a hot draft free place till doubled in bulk, about 1 hour.
  3. 3. Lightly coat twelve 2 inch c. with cooking spray. Stir the dough down with a spoon into the muffin c., fill about half full. Cover loosely with towel and let rise 30 min.
  4. 4. Toward end of rising period, preheat oven to 400 degrees. Bake rolls 15-20 min till lightly brown.

    I'm trying these out now. Not sure how it's gonna go. Not really a dough at all, more like a batter.... alittle worried. Not sure how "batter" will rise when left to rest. I will leave a review and comment when this is done.... we shall see.....I'm trying this with all whole wheat that I hand grinded... could this be the problem? This is an experiement I'm hopeful but doubtful!
