Whole Wheat Banana Chocolate Mini Muffins Recipe

These are my kids' favorite! Made with whole wheat flour, sucanat, and only egg whites, they are a healthier alternative to "regular" muffins, but just as good.
Great for a sweet treat in the lunch box!

Directions

  1. Preheat oven to 375°F. Spray mini muffin pan with olive oil cooking spray.
  2. Combine dry ingredients (flour, baking powder, baking soda, cinnamon, cocoa, and salt). Stir until well mixed.
  3. In separate bowl, combine egg whites and sucanat until sucanat is dissolved. Add oil, milk, vanilla and bananas. Stir to combine.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Mix in chocolate chips.
  6. Fill muffin cups 2/3 full and bake for 10 minutes. Remove from pan and cool on cooling rack.
