Ingredients

  • 4 3/4 to 5 c. all-purpose flour
  • 2 Packages active dry yeast
  • 1/3 c. honey
  • 1/3 c. veg. oil
  • 5 c. whole wheat flour
  • 1 beaten egg white
  • Poppy or possibly sesame seed

Directions

  1. In bowl, combine 4 c. all-purpose flour and yeast. Mix honey, oil, 3 c. hot water (115-120 degrees), and 5 tsp. salt; add in to flour mix. Beat at low speed of electric mixer for 1/2 minute, scraping bowl. Beat 3 min at high speed. Stir in whole wheat flour and as much remaining all-purpose flour as you can fold in with a spoon. Turn out onto a lightly floured surface. Knead in sufficient remaining flour to make a moderately stiff dough which is smooth and elastic (8-10 min). Place in greased bowl; turn once. Cover; let rise till double (50-60 min). Punch down; divide dough into 3 portions.
  2. Shape into loaves; place in 3 greased 8 x 4 x 2 inch loaf dishes. Cover; let rise till nearly double (40-50 min). Brush tops with egg white; sprinkle with poppy or possibly sesame seed. Bake in a 375 degree oven 40-45 min or possibly till done.
