We are all looking for more ways to get whole grains into our diet, right? But with all the hype of low carb diets and such, bread is often the first thing cut. Personally, I can’t do it; so I opt for the whole grain variety. There are so many different varieties of whole grain bread out there these days. Everything from English Muffins to bread to tortillas.

I am proud today to be talking about the Grain Foods Foundation. Grains are good for you. Grains now make up a quarter of USDA MyPlate recommendations. Whole grains contain lots of the nutrients our bodies need to function properly. They contain lots of vitamins and minerals, fiber and antioxidants. There are tons of ways that you can get whole grains too: whole wheat, buckwheat, ancient grains (quinoa, bulgar), brown rice and more. It is an easy and tasty way to get the nutrients your body needs. GrainsForYourBrain is a new site that features information on grains and what our bodies need, especially the brain. There are videos and recipes to help you eat smart and get on the right track with eating whole grains.

Whole Grain Banana Bread

Instructions

Preheat oven to 350 degrees. Spray or lightly grease a 9×5 inch loaf pan.

In a large bowl mix together mashed bananas, oil, applesauce, sugar, eggs, milk, and vanilla.

In a separate bowl combine flour, baking soda, baking powder, and salt. Add flour mixture to the banana mixture. Mix until just combined.

Pour batter into prepared pan.

Bake for 60 to 75 minutes or until a tester comes out clean. Remove from oven, and let set for 10 minutes before removing bread from the pan. Cool completely on a wire rack.
