%20combined%20with%20trying%20to%20finally%20get%20the%20changes%20done%20on%20the%20TV%20pilot%20we're%20supposed%20to%20be%20writing.%20I%20figured%20if%20I%20took%20my%20weekend%20to%20cook%20I'd%20have%20a%20lot%20of%20stuff%20to%20share%20in%20the%20coming%20days.%20I%20have%20a%20whole%20array%20of%20fast%20and%20easy%20Indian%20vegan%20dishes%20that%20will%20make%20the%20holiday%20grilling%20ahead%20a%20whole%20lot%20easy.%20I%20also%20thought%20who%20better%20to%20test%20these%20on%20than%20a%20bunch%20of%20friends%20who%20are%20not%20exactly%20vegan.%20Sort%20of%20the%20%22If%20Mikey%20Likes%20It%22%20theory.%20Very%20scientific.%3C/p%3E%3Cp%3ESo%20how%20then%20did%20all%20of%20those%20vegan%20dishes%20wind%20up%20with%20Blueberry%20Buttermilk%20ice%20cream%20as%20a%20dessert?%20I'm%20a%20sucker%20for%20Serres%20Ranch%20blueberries%20is%20why.%20That's%20my%20story%20and%20I'm%20sticking%20to%20it.%20The%20vegan%20dishes%20will%20be%20coming%20up%20in%20a%20couple%20of%20days,%20but%20for%20right%20now,%20it's%20dessert%20first.%3C/p%3E%3Cp%3EBlueberry%20Buttermilk%20Ice%20Cream%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3ERinse%20and%20dry%201%20cup%20of%20blueberries.%3C/p%3E%3Cp%3ESet%20them%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20mix%20together%201%20and%201/2%20cups%20of%20buttermilk,%203/4%20cups%20of%20sugar,%202%20tsps%20of%20vanilla%20extract.%3C/p%3E%3Cp%3EMix%20everything%20together%20well.%3C/p%3E%3Cp%3EAdd%20in%202%20cups%20of%20whipping%20cream.%3C/p%3E%3Cp%3EMix%20it%20well%20again.%20The%20sugar%20should%20be%20dissolved%20and%20everything%20combined.%3C/p%3E%3Cp%3EPour%20the%20buttermilk,%20sugar,%20and%20vanilla%20into%20an%20ice%20cream%20machine.%3C/p%3E%3Cp%3EProcess%20the%20ice%20cream%20for%20about%2025%20minutes%20or%20so,%20then%20add%20in%20the%20blueberries.%3C/p%3E%3Cp%3EAdd%20them%20slowly%20and%20push%20them%20down%20into%20the%20mixture%20as%20you%20add%20them%20so%20that%20they're%20evenly%20distributed%20through%20the%20ice%20cream%20mixture.%3C/p%3E%3Cp%3EProcess%20the%20ice%20cream%20for%20an%20additional%2010%20minutes%20or%20so%20until%20it%20starts%20to%20firm%20up.%3C/p%3E%3Cp%3EPut%20the%20ice%20cream%20into%20a%20container%20and%20stick%20it%20in%20the%20freezer%20for%20an%20hour%20or%20two%20to%20harden%20further.%3C/p%3E%3Cp%3ETake%20it%20out%20and%20enjoy!%3C/p%3E%3Cp%3EI%20love%20the%20tart/sweet%20flavor%20of%20buttermilk%20and%20blueberry%20ice%20cream.%20It%20was%20the%20perfect%20indulgence%20to%20offer%20after%20a%20very%20clean%20vegan%20meal.%20Nearly%20no%20guilt.%20I%20also%20make%20a%20version%20of%20this%20ice%20cream%20using%20homemade%20creme%20fraiche%20instead%20of%20buttermilk.%20The%20next%20step%20is%20to%20see%20if%20I%20can%20make%20a%20coconut%20milk%20version%20of%20this%20and%20take%20the%20vegan%20all%20the%20way%20through%20dessert.%20Another%20thing%20I'm%20kicking%20around%20is%20the%20idea%20of%20a%20blueberry%20balsamic%20syrup.%20Meanwhile%20on%20to%20vegetables.%3C/p%3E%3Cp%3EComing%20up%20next,%20an%20array%20of%20easy%20quick%20vegan%20and%20gluten-free%20side%20dishes%20than%20can%20be%20served%20at%20any%20Summer%20holiday%20pot%20luck.%20Look%20for%20Corn%20and%20Coconut%20Salad,%20Cucumber%20Shallot%20salad%20with%20Coconut%20Milk%20Lime%20Dressing,%20and%20a%20South%20Indian%20Eggplant%20Bharta,%20all%20of%20which%20can%20be%20made%20ahead%20and%20served%20at%20room%20temperature,%20and%20just%20for%20the%20hell%20of%20it,%20Shrimp%20Steamed%20with%20Mustard%20Seed%20and%20Spices.%20Follow%20along%20on%20Twitter%20@kathygori%3C/p%3E){kind=link}
