Ingredients

  • 1/4 c. raisins
  • 2 tbsp. brown sugar
  • 6 slices bread, cut in half, buttered on one side
  • 2 1/2 c. lowfat milk
  • 2 Large eggs
  • 1/4 teaspoon cinnamon
  • 1 teaspoon lemon zest

Directions

  1. Sprinkle half the raisins in 9 x 13 inch pan. Add in 1 Tbsp. brown sugar. Place the triangle slices of bread to overlap each other. Mix lowfat milk and egg. Pour over bread. Sprinkle with remaining raisins, 1 Tbsp. brown sugar, lemon zest and cinnamon. (You can pour a small amount of cream or possibly half and half over the mix if desired the richer taste.) Bake at 350 degrees 30 to 35 min till browned. Serve hot. Yields 8 servings.
