Super summer Cold Salad that is easily prepared, chilled and served.

  • One Watermelon Radish (rinsed well)
  • one cup Fresh Snow Peas
  • one cup Fresh Whole Green Beans
  • one cup hulled, rinsed, sliced Fresh Strawberries
  • Salt and Black pepper, to taste if desired
  • Optional Light Lemon-Vinaigrette dressing

Directions

  1. In a pot of salted boiling water add fresh whole green beans, snow peas and cook 3 minutes, drain and allow to cool
  2. Add into a mixing bowl, add all other ingredients (I use a mandoline to cut watermelon radish) and gently toss
  3. Cover and refrigerate at least one hour before serving
  4. Optional Lemon dressing: One fresh Lemon, juice and zest, 2 tablespoons Olive Oil, one tablespoon white vinegar, mix and drizzle over Cold Salad
