Warm Thai-Peanut Noodle Main Dish

Ingredients

  • 8 ounce Angel Hair Pasta (or sub with your favorite noodles)
  • salt for boiling noodles
  • 1/4 cup Creamy Peanut Butter
  • 3 tablespoons (low sodium ) Soy Sauce
  • one scallion (cut on the bias)Garnish
  • one teaspoon grated fresh ginger root
  • one carrot (shredded)

Directions

  1. In a pot of boiling salted water add pasta and cook per box instructions to al dente, rinse
  2. In a saute pan on medium low heat add all other ingredients and stir gently to mix as you add each, cook 5-6 minutes
  3. Add cooked noodles and gently stir. top with scallions, cook 3-4 minutes and serve.
