Waldorf Whip Salad Mold

Ingredients

  • 1 (3 ounce.) pkg. lemon flavored gelatin
  • 1 c. warm water
  • 3 tbsp. lemon juice
  • 1/2 c. mayonnaise
  • 1 c. minced celery
  • 1/2 c. minced walnuts
  • 1 1/2 c. minced apples
  • 2/3 c. undiluted evaporated lowfat milk
  • Walnut halves
  • Apple slices

Directions

  1. Dissolve gelatin in warm water, cold. Add in 1 Tbsp. lemon juice, mayonnaise, celery, walnuts and apples; mix well. Refrigeratetill mix is the consistency of unbeaten egg whites.
  2. Refrigerateevaporated lowfat milk in refrigerator ice cube tray till soft ice crystals form around edges (10-15 min). Whip till stiff (1 minute). Add in the remaining lemon juice. Whip till very stiff (1-2 min longer). Fold evaporated lowfat milk (whipped) into gelatin mix. Spoon into 5 c. mold. Refrigeratetill set (approximately 2 hrs). Unmold on salad greens. Garnish with walnut halves and apple slices. Serves 8.
  3. Turn an ordinary Waldorf Salad into a creamy luscious offering. A nutty thing to do but well worth it!
