Vintage Cakes ~ Black & White Cake

I’ve been baking cakes for about 28 years and have been used to doing my own thing in the kitchen. At the gentle (LOL) nudging of my dear friend Anne , I decided to join the Cake Slice Bakers. Paloma of The Coffee Shop is the leader of the group and after a brief note to her I was warmly accepted into the group. The book we’re baking from is Vintage Cakes by Julie Richardson and this month’s selection is The Black & White Cake. %20nudging%20of%20my%20dear%20friend%20Anne%20,%20I%20decided%20to%20join%20the%20Cake%20Slice%20Bakers.%20Paloma%20of%20The%20Coffee%20Shop%20is%20the%20leader%20of%20the%20group%20and%20after%20a%20brief%20note%20to%20her%20I%20was%20warmly%20accepted%20into%20the%20group.%20The%20book%20we%E2%80%99re%20baking%20from%20is%20Vintage%20Cakes%20by%20Julie%20Richardson%20and%20this%20month%E2%80%99s%20selection%20is%20The%20Black%20&%20White%20Cake.%20The%20description%20of%20the%20cake%20stated%20that%20it%20is%20the%20reverse%20of%20the%20classic%20white%20cake%20with%20chocolate%20frosting.%20I%20can%20count%20the%20times%20on%20one%20hand%20that%20I%E2%80%99ve%20made%20a%20white%20cake%20with%20chocolate%20frosting.%20At%20Casa%20de%20Sweet%20Sensations%20we%20tend%20to%20go%20with%20chocolate%20cake%20with%20chocolate%20frosting,%20with%20one%20exception.%20Charisse%20likes%20yellow%20cake%20with%20messy%20chocolate%20frosting%20and%20occasionally%20I%20give%20in%20to%20her%20whims.%3C/p%3E%3Cp%3EWhen%20I%20looked%20at%20the%20long%20list%20of%20ingredients%20for%20the%20cake%20and%20then%20the%20separate%20recipes%20for%20the%20frosting%20and%20ganache%20filling%20I%20honestly%20wondered%20what%20I%20had%20gotten%20myself%20into.%20Well%20I%20declared%20that%20I%20was%20ready%20and%20willing%20to%20get%20out%20of%20my%20baking%20comfort%20zone%20and%20here%20I%20am%20right%20at%20the%20edge.%3C/p%3E%3Cp%3EOne%20of%20the%20most%20important%20things%20to%20do%20when%20baking%20no%20matter%20how%20long%20or%20short%20the%20list%20of%20ingredients%20is%20is%20to%20measure%20out%20all%20of%20the%20ingredients%20prior%20to%20mixing.%20There%20is%20nothing%20worse%20than%20finding%20out%20after%20the%20cake%20is%20in%20the%20oven%20that%20you%E2%80%99ve%20left%20something%20out.%20Don%E2%80%99t%20worry%20I%20didn%E2%80%99t%20but%20I%20sure%20was%20a%20nervous%20Nelly%20while%20getting%20everything%20together.%3C/p%3E%3Cp%3EThe%20cake%20is%20intensely%20chocolate%20due%20to%20the%20Hershey%E2%80%99s%20Dark%20Cocoa.%20I%20also%20think%20that%20the%20coffee%20and%20dark%20brown%20sugar%20added%20to%20the%20depth%20of%20the%20chocolate%20flavor.%20It%20was%20baked%20in%20two%20eight%20inch%20pans%20and%20mine%20were%20done%20in%2040%20minutes.%20After%20it%20cooled%20I%20slice%20the%20small%20domes%20from%20the%20tops%20and%20of%20course%20I%20had%20to%20taste.%20Let%20me%20tell%20you%20there%20is%20nothing%20like%20a%20bite%20of%20warm%20chocolate%20cake.%20Man%20that%20was%20good!%20The%20ganache%20came%20together%20quickly%20and%20of%20course%20I%20had%20to%20have%20a%20finger%20lick%20of%20that%20also.%20From%20the%20two%20quick%20tastes%20that%20I%20had%20I%20knew%20this%20cake%20was%20going%20to%20be%20awesome.%3C/p%3E%3Cp%3ESome%20time%20back%20I%20made%20Swiss%20Meringue%20Buttercream%20and%20found%20it%20to%20be%20just%20ok.%20Seemed%20like%20a%20lot%20of%20work%20for%20just%20ok%20results.%20Well%20what%20do%20you%20know%20the%20Vanilla%20Buttercream%20frosting%20for%20this%20Black%20&%20White%20Cake%20was%20leading%20me%20down%20that%20warm%20the%20egg%20whites%20and%20beat%20the%20you%20know%20what%20out%20of%20them%20once%20again.%20The%20addition%20of%20vanilla%20beans%20held%20a%20tasty%20promise.%20I%20was%20on%20a%20roll%20tasting%20the%20separate%20components%20and%20the%20buttercream%20was%20silky%20smooth%20and%20the%20vanilla%20flavor%20was%20popping!%3C/p%3E%3Cp%3EI%20decided%20to%20serve%20the%20cake%20for%20Father%E2%80%99s%20Day%20and%20was%20super%20excited%20to%20present%20it%20to%20my%20family.%20However,%20somewhere%20along%20the%20way%20my%20taste%20buds%20decided%20to%20go%20into%20overdrive%20with%20salty%20flavors.%20The%20frosting%20recipe%20only%20called%20for%201/8%20tsp%20of%20fine%20sea%20salt%20and%20I%20was%20very%20precise%20in%20my%20measurement.%20But%20I%E2%80%99ll%20be%20darned,%20when%20I%20had%20a%20slice%20the%20next%20day%20it%20was%20super%20salty.%20Just%20to%20be%20sure,%20and%20for%20quality%20control%20purposes%20(ha!!)%20I%20had%20another%20piece%20later%20that%20evening.%20Yep,%20it%20still%20tasted%20salty.%20I%20asked%20Charisse%20two%20maybe%20three%20times%20when%20she%20was%20eating%20it%20if%20it%20tasted%20salty%20to%20her.%20She%20gave%20me%20that%20look%20that%20said%20please%20don%E2%80%99t%20ask%20me%20that%20again%20Mom,%20I%20said%20no%20the%20first%20time!%20Maybe%20it%20was%20just%20me.%20At%20any%20rate%20I%20think%20it%20was%20kind%20of%20pretty%20and%20the%20Mr.,%20who%20by%20the%20way%20says%20he%20doesn%E2%80%99t%20like%20sweets%20has%20had%20several%20pieces.%20Guess%20that%20means%20case%20closed.%20Can%E2%80%99t%20wait%20to%20see%20what%E2%80%99s%20up%20for%20next%20month.%3C/p%3E%3Cp%3EVintage%20Cakes%20by%20Julie%20Richardson%20is%20filled%20with%20lots%20of%20classics%20and%20I%E2%80%99m%20sure%20lots%20of%20sweet%20treats%20that%20will%20surprise%20your.%20Go%20here%20to%20grab%20a%20copy%20for%20yourself.%3C/p%3E){kind=link}
