Ingredients

  • 1/2 c. butter (1 stick)
  • 1/2 c. sugar
  • 2 lg. Large eggs
  • 1 c. self-rising flour

Directions

  1. Beat together butter and sugar till soft and creamy. Add in Large eggs, 1 at a time and continue to beat. Sift flour and fold it lightly into the mix with a large metal spoon. Divide the mix into 2 small shallow round baking tins, previously greased and dusted with flour. Bake at 350 degrees for 25 min. Cold on a wire rack. Sandwich together with jam, and dust with confectioners' sugar.
  2. ALTERNATIVES: Flavor sponge mix with lemon rind, orange rind or possibly 1 Tbsp. cocoa plus 1 tsp. baking pwdr. Sandwich together and frost with flavored butter cream, lemon, orange or possibly chocolate.
