Velouté Sauce

Ingredients

  • 2 cups chicken broth
  • ⅓ cup butter
  • ⅓ cup flour
  • 1 tsp. salt
  • dash nutmeg
  • dash pepper

Directions

  1. Mix together all of the ingredients, except for the broth, and cook for a minute, covered, at 950 watts.
  2. Stir, add the broth, then heat, vented, at 650 watts for five minutes. Stir again.
