For those of you who aren’t familiar with the humble Scotch egg, it’s a British classic. Hard boiled eggs are wrapped in sausage meat, and coated in breadcrumbs. Obviously sausage meat isn’t veggie-friendly, so I decided to make my own vegetarian Scotch eggs using a tasty lentil mixture
