Ingredients

  • 1 lg. red pepper, minced
  • 1 lg. green pepper, minced
  • 1 lg. onion, minced
  • 2 lg. potatoes, peeled & diced
  • 2 tbsp. extra virgin olive oil
  • 2 med. zucchini, minced
  • 1 pound fresh mushrooms, minced
  • 1/4 teaspoon red pepper
  • 1/2 teaspoon Italian seasoning
  • 1/2 c. fresh Italian parsley, minced
  • 3 cloves garlic, crushed
  • 1/4 c. Parmesan cheese, freshly grated

Directions

  1. In a large saute/fry pan, saute/fry the peppers, onion and potatoes in the oil for about 5 min; stir often. Add in zucchini, warm pepper, mushrooms, seasonings, parsley and garlic; stirring often for 10 min. Toss with Parmesan cheese and serve warm. Serves 6.
