Upside-Down Tomato Chicken Pie with Sweet Potato Mash

This is 'upside-down' simply because I basically stuck sweet potato mash on the bottom, rather than making an actual sweet potato crust. Yummy yes, but I warn you that it's difficult to serve up as proper pie slices!

Ingredients

  • 2 chicken breasts, skinless and boneless, chopped
  • 8 cherry tomatoes, halved
  • 200g can of chopped tomatoes
  • 2 celery sticks, chopped
  • Small red onion, chopped
  • 1 tbsp basil
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 1 sweet potato
  • 50ml milk

Directions

  1. Fry half the onion, plus a bit of the garlic and ginger. Add the potato chunks then cover with water.
  2. Bring to the boil, then cover and leave to simmer for about 10-15 minutes. Drain off the water, add the milk, then mash away. Press this into the bottom of your pie dish and set aside.
  3. Fry the rest of the onion with the chicken for a few minutes.
  4. Add the rest of the ingredients and cook over a low heat.
  5. Transfer the contents to your pie dish, then bake for about half an hour at 190 degrees C.
