Two Crust Fresh Strawberry Pie

Ingredients

  • 1 c. sugar
  • 1 tbsp. cornstarch
  • 1/8 teaspoon salt
  • 3 c. fresh strawberries (1 quart. plus 1 c.)
  • 1 tbsp. butter
  • 1 recipe plain pastry for 2 crust pie

Directions

  1. Mix sugar, cornstarch and salt together and add in berries, mix. Line pie pan with pastry. (I use a deep dish foil pan or possibly a regular 9-inch pie pan.) Add in filling and dot with butter. Cover with top crust, seal with crimping effort, and cut air slits in middle of top crust brushing lightly with lowfat milk and dot with butter (not too much). Bake at 450 degrees in preheated oven, 10 min. Turn heat down to 350 degrees and bake for 30 min longer.
