Turkey & Vegetable Quesadillas Recipe

Each quesadilla is cut into 8 wedges. Here, served as a hungry-man's dinner with Spanish rice in center.

I used "Lite" or thin style flour tortialls, labeled as 100 calories each, 1 gram fat, and 20 carbs.
Work quickly so tortillas do not get dry & cracked. Here bottom tortilla in skillet has a layer of cheese first, then turkey/veggie filling, then topping of more cheese. Finish with top tortilla and brown lightly on both sides.
