Turkey Escalopes with Cranberries and Coconut Recipe

Turkey contains the lowest saturated fat of any meat, around 1%, which makes it a very healthy choice, although sometimes its flavour does need to be jazzed up a little! The cranberry/mustard filling here does the job very well.

If you are making this mid-week and are short of time you can prepare the escalopes the night or morning before you are going to eat them, refrigerate and bake them when you are ready. Preparation time is around 15 minutes.

Directions

  1. Slice the turkey breast lengthwise into four portions, 6 oz (168g) each.
  2. Place between layers of plastic wrap (clingfilm) and hit them with a rolling pin until flattened out.
  3. Season with salt and pepper and spread with each escalope with 1 teaspoon mustard and 1 tablespoon cranberry sauce. You may need cocktail sticks to secure.
  4. Pour the beaten egg onto a plate.
  5. Mix the breadcrumbs and coconut together and pour into a shallow bowl.
  6. Dip each escalope into the egg mix and then coat with the breadcrumb mixture.
  7. Remove the cocktail sticks if used.
  8. Arrange in a lightly oiled baking dish and bake in a 350 degree F (180 degree C) oven for 35-40 minutes until tender.
