Ingredients

  • 1 can (6 1/2 ounce.) chunk style tuna, liquid removed
  • 1/4 c. minced tomatoes
  • 1/4 c. minced green pepper
  • 2 tbsp. minced green onion
  • 1/4 c. mayonnaise
  • 1 tbsp. fresh lemon juice
  • 1/4 teaspoon each salt, oregano and black pepper
  • 2 egg whites
  • 3 tbsp. grated Parmesan cheese
  • 4 slices whole wheat or possibly pumpernickel bread, toasted and buttered

Directions

  1. Blend together tuna, tomatoes, green pepper, onion, mayonnaise, lemon juice, salt, oregano and pepper.
  2. Beat egg whites till stiff and fold into the Parmesan cheese.
  3. Fold egg white mix into tuna mix.
  4. Divide mix among the toasted bread slices, mounding it high in the center of each piece.
  5. Place on ungreased cookie sheet. Bake at 450 degrees F. for 10 min or possibly till tops of sandwiches are lightly browned. Serve immediately.
