%3C/p%3E%3Cp%3EAnyway,%20we%20had%20this%20the%20other%20night%20for%20dinner,%20and%20it%20was%20really%20good.%20%20The%20leftovers%20tonight%20were%20even%20better!%3C/p%3E%3Cp%3ETuna%20&%20Broccoli%20Pie%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0%20F%3C/p%3E%3Cp%3EMelt%201%20T%20butter%20over%20medium%20heat.%20%20Add%20onion%20and%20saute%20with%20basil%20and%20chives%20until%20onion%20is%20translucent.%20%20Add%20more%20butter%20if%20needed%20as%20onion%20is%20cooking.%3C/p%3E%3Cp%3ETurn%20off%20heat%20and%20stir%20in%20rice,%20tuna,%20and%20broccoli;%20add%20cheese.%20%20Spoon%20mixture%20into%20greased%20deep%20dish%20pie%20pan.%3C/p%3E%3Cp%3EWhisk%20together%20eggs%20and%20milk;%20season%20with%20salt%20and%20pepper.%20%20Pour%20over%20rice%20mixture.%20Shake%20dish%20to%20settle%20eggs%20and%20remove%20any%20air%20bubbles.%3C/p%3E%3Cp%3EBake%20for%201%20hour%20and%2010%20minutes.%20If%20necessary,%20cover%20with%20foil%20if%20the%20top%20starts%20to%20brown%20too%20much.%20%20%20Remove%20from%20oven%20and%20let%20stand%20for%205%20minutes;%20Cut%20into%20wedges%20and%20serve.%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EI%20baked%20this%20in%20my%20cast%20iron%20skillet,%20because%20I%20used%20it%20to%20saute%20the%20onion%20and%20I%20figured%20it%20could%20go%20in%20the%20oven,%20so%20why%20dirty%20another%20dish.%20%20And%20because%20my%20dad%20always%20baked%20his%20eggs%20in%20a%20skillet.%20%20BUT,%20I%20won't%20be%20doing%20that%20again.%20%20The%20cleanup%20was%20harder%20than%20I%20expected.%20%20Maybe%20my%20skillet%20just%20isn't%20seasoned%20properly...%20but%20usually%20I%20can%20just%20scrub%20it%20out%20with%20a%20bit%20of%20salt%20and%20this%20time%20I%20had%20to%20do%20some%20soaking%20and%20a%20lot%20more%20scrubbing.%20%20So,%20next%20time%20I'm%20using%20a%20pie%20pan.%3C/p%3E%3Cp%3ESince%20there%20are%20only%20two%20of%20us,%20we%20ate%20half%20of%20this%20for%20dinner%20one%20night%20and%20then%20I%20heated%20it%20up%20again%20for%20dinner%20tonight.%20%20For%20the%20leftovers,%20I%20heated%20it%20at%20350%C2%B0%20for%2015%20minutes%20covered%20and%20then%20I%20removed%20the%20cover%20and%20heated%20for%20an%20additional%2015%20minutes.%20%20And%20then%20I%20added%20just%20a%20touch%20more%20cheese%20to%20the%20top%20and%20left%20it%20in%20the%20oven%20just%20long%20enough%20to%20melt%20it.%20%20I'm%20not%20sure%20what%20the%20reheating%20did,%20but%20this%20was%20even%20better%20the%20second%20time.%20%20The%20bottom%20and%20edges%20of%20the%20already%20cut%20wedges%20crisped%20up%20a%20bit,%20and%20the%20flavors%20had%20blended%20better.%20%20We%20really%20enjoyed%20it.%20%20Oh,%20and%20a%20little%20hot%20sauce%20on%20top%20is%20good,%20too.%3C/p%3E){kind=link}
