Truffled Fillet Of Beef In Pastry

Ingredients

  • 1 kg beef fillet trimmed
  • 25 gm butter
  • 1 Tbsp. extra virgin olive oil
  • 2 x 50g jars of chopped black truffle
  • 350 gm puff pastry
  •     beaten egg to brush

Directions

  1. Season the meat with salt and pepper.
  2. Heat the butter and oil in a pan and once warm seal the beef all over (about 10 min altogether).
  3. Remove to a plate to cold.
  4. Roll out the pastry into a rectangle large sufficient to enclose the meat completely.
  5. Spread ajar of truffles over the centre of the pastry top with the beef and spread the otherjar on top.
  6. Moisten the edges of the pastry with water then wrap around the meat pressing the joins well to seal.
  7. Brush with the beaten egg and decorate if desired with pastry leaves flowers or possibly sporrans.
  8. Place on a lightly buttered baking sheet and bake at 200C140F/Gas Mark 6 for 20 min then reduce the heat to 180C/350F/Gas Mark 4 for a further 15 min or possibly so till golden: the meat should be medium.
  9. Cut into slices and serve with a simple gravy spiced up with red wine and green vegetables such as broccoli spinach and green beans.
