%20salted%20caramel.%20I%20like%20them%20to%20be%20traditional,%20but%20this%20year%20I%20had%20a%20happy%20accident%20when%20I%20subbed%20in%20Madeira%20cake,%20because%20the%20shop%20had%20run%20out%20of%20the%20cake%20I%20wanted.%20It%E2%80%99s%20lovely%20and%20buttery-rich%20but%20also%20dense,%20so%20it%20soaks%20up%20the%20booze%20without%20going%20all%20wet%20and%20bitty%20at%20the%20bottom%20which%20is%20something%20that%20has%20always%20made%20me%20deeply%20uncomfortable.%20I%20sliced%20it%20and%20spread%20with%20raspberry%20jam%20a%20la%20Delia%20and%20Hoppy,%20as%20jelly%20in%20trifles%20is%20also%20gross,%20then%20soaked%20it%20in%20Marsala%20(picked%20it%20up%20by%20mistake%20instead%20of%20Madeira%20%E2%80%93%20again,%20lovely),%20topped%20with%20raspberries%20(their%20acidity%20is%20perfect%20with%20all%20the%20sugar),%20home%20made%20custard%20(I%E2%80%99m%20not%20an%20animal),%20whipped%20cream,%20toasted%20almonds.%20Done.%3C/p%3E%3Cp%3EThis,%20for%20me,%20is%20the%20perfect%20trifle.%3C/p%3E%3Cp%3EThe%20Perfect%20Trifle%20(serves%206)%3C/p%3E%3Cp%3EToast%20the%20flaked%20almonds%20in%20a%20dry%20pan%20or%20under%20the%20grill%20until%20golden.%20Set%20aside.%20Slice%20the%20Madeira%20cake%20into%20little%20fingers,%20then%20make%20sandwiches%20with%20the%20raspberry%20jam.%20Use%20it%20to%20line%20the%20base%20of%20a%20bowl%20(preferable%20clear%20so%20you%20can%20see%20the%20layers),%20then%20pour%20the%20Marsala%20evenly%20over%20the%20top%20and%20set%20aside%20for%20it%20to%20soak%20in.%3C/p%3E%3Cp%3EMake%20the%20custard%20by%20putting%20the%20double%20cream%20in%20a%20saucepan%20and%20heating.%20Scrape%20the%20seeds%20from%20the%20vanilla%20pod%20and%20add%20them%20to%20the%20cream,%20along%20with%20the%20pod.%20In%20a%20bowl,%20mix%20together%20the%20egg%20yolks,%20cornflour%20and%20sugar.%20When%20the%20cream%20is%20hot,%20add%20it%20to%20the%20egg%20mixture,%20whisking%20it%20constantly.%20Return%20the%20mixture%20to%20the%20pan%20on%20a%20low%20heat%20and%20cook,%20stirring%20all%20the%20time%20until%20it%20is%20thickened.%20Set%20aside%20in%20a%20shallow%20dish%20with%20a%20piece%20of%20greaseproof%20paper%20on%20the%20top%20(touching%20the%20top%20of%20the%20custard,%20to%20stop%20it%20forming%20a%20skin),%20until%20cool.%3C/p%3E%3Cp%3ELayer%20the%20raspberries%20on%20top%20of%20the%20Madeira%20cake,%20then%20add%20the%20cooled%20custard.%20Whip%20the%20cream%20to%20soft,%20floppy%20peaks%20and%20spoon%20on%20top.%20Finish%20with%20the%20almonds.%3C/p%3E){kind=link}
