Tres Leches Cake

Tres Leches Cake is the perfect indulgence for any festive occasion; a sponge cake soaked in three kinds of sweetened milk and topped with whipped cream, it is a dairy lover’s dream come true!
It is funny the way photographing food has changed my perception of winter and light. It used to feel like the long nights and cold weather lasted for months. But now that I mark light by whether or not I have enough to photograph my dinner I am much more aware of the approaching spring. Already I have enough light to begin taking decent photos again (mind you I am also behind so it might take me a week or 2 to catch up to those photos).

.%3C/p%3E%3Cp%3EThis%20is%20very%20exciting.%3C/p%3E%3Cp%3EAnyway,%20about%20this%20cake.%20This%20is%20the%20long%20awaited%20John%E2%80%99s%20birthday%20cake.%20Now%20this%20cake%20was%20a%20Very%20Big%20Deal.%20Why?%20Because%20I%20don%E2%80%99t%20particularly%20like%20Tres%20Leches%20Cake,%20so%20I%20know%20John%20did%20not%20think%20I%20would%20ever%20make%20it.%20And%20John?%20He%20loves%20it.%20Like%20loves%20it%20more%20than%20any%20other%20dessert%20I%20can%20think%20of%20except%20maybe%20mousse.%20And%20for%20what%E2%80%99s%20it%20worth,%20the%20kids%20agree%20with%20John.%20This%20was%20a%20huge%20hit.%20(If%20you%20are%20wondering%20why%20it%20is%20not%20my%20thing,%20it%20is%20just%20a%20little%20sweet%20for%20me,%20and%20I%20do%20not%20particularly%20care%20for%20the%20texture%20of%20milk%20soaked%20cake.%20No%20biggie,%20just%20not%20for%20me.)%3C/p%3E%3Cp%3EI%20made%20this%20now,%20because%20it%20was%20John%E2%80%99s%20big%20birthday%20surprise%20(as%20far%20as%20food%20went).%20But%20this%20cake%20would%20be%20really%20good%20in%20the%20summer,%20cold%20from%20the%20fridge.%20And%20fresh%20berries%20would%20cut%20some%20of%20that%20sweetness%20too.%20I%20would%20also%20like%20to%20try%20it%20with%20a%20coffee%20flavor.%20Heck%20I%20may%20be%20talking%20myself%20into%20trying%20to%20make%20it%20again,%20only%20in%20the%20summer!%20Goodness%20knows%20my%20family%20would%20like%20me%20to.%20They%20went%20crazy%20night%20after%20night%20for%20this%20(it%20is%20a%209X13%20cake,%20so%20it%20took%20us%20a%20few%20days%20to%20eat).%3C/p%3E%3Cp%3EI%20am%20going%20to%20link%20you%20to%20Pati%E2%80%99s%20Mexican%20Table%20for%20the%20recipe,%20as%20that%20was%20the%20recipe%20I%20used%20and%20she%20explains%20the%20cake%20really%20well.%20My%20only%20change%20was%20to%20add%20a%20few%20teaspoons%20of%20Kahlua%20to%20the%20soaking%20milks%20and%202%20tablespoons%20of%20Kahlua%20to%20the%20cake%20batter%20(I%20added%20it%20with%20the%20vanilla).%20I%20did%20all%20this,%20unsurprisingly,%20in%20an%20effort%20to%20make%20the%20cake%20a%20little%20less%20sweet%20vanilla%20for%20me.%20I%20also%20added,%20for%20the%20same%20reason,%20salt:%201/2%20teaspoon%20fine%20sea%20salt%20to%20the%20cake%20batter,%20and%201%20t%20coarse%20sea%20salt%20to%20the%20soaking%20milk%20mixture.%3C/p%3E%3Cp%3EFor%20the%20whipped%20cream%20topping%20I%20used%20Snowville%20Creamery%20heavy%20whipping%20cream.%20I%20have%20mentioned%20them%20in%20the%20past%20as%20being%20my%20top%20choice%20for%20whipped%20cream.%20You%20certainly%20do%20not%20need%20to%20search%20them%20out,%20but%20I%20have%20found%20that%20a%20higher%20butterfat,%20less%20processed%20cream%20will%20hold%20its%20topping%20better%20with%20just%20a%20little%20corn%20starch%20from%20the%20powdered%20sugar%20used%20to%20sweeten%20it.%20Plus%20it%20just%20tastes%20better!%20You%20do%20have%20to%20watch%20carefully%20when%20whipping%20to%20make%20sure%20it%20does%20not%20turn%20into%20butter%20though!%3C/p%3E){kind=link}
