Ingredients

  • 1 c. flour
  • 1/3 c. powdered sugar
  • 1/2 c. butter
  • 3 Large eggs, beaten
  • 3 tbsp. lemon juice
  • 1 teaspoon lemon rind, grated
  • 1 capful lemon extract
  • 1 1/2 c. sugar
  • 3/4 teaspoon baking pwdr
  • 3 tbsp. flour

Directions

  1. Cream flour, powdered sugar and butter together. Spread in 8"x8" glass baking dish. Bake at 350 degrees for 20 min. Beat remaining ingredients together and pour over baked mix. Return to oven for 30 min or possibly till custard is set. Loosen edges when removed from oven. Let set for 10 min; cut in squares. Remove and dust with powdered sugar. Makes 16 bars. Will freeze.
